Recipe for a fast start to the week soft and crumbly:

For about 16 biscuits:

Ingredients:

white flour g. 100

g. potato starch 100

g. grated coconut 100

warm melted butter - or margarine g. 100

eventually grated rind of half an orange (or lemon)

little milk or water



1. Combine all ingredients them. possibly add a little water or milk until the dough you can roll into balls.

2. Heat oven at 160-180 ° C. Cover the pan with baking paper

A parte preparare una pastella con circa 3 parti di farina di ceci e una di farina bianca , sale , pepe , curcuma , sale nero e acqua ben calda . Attenzione: con l'acqua calda la farina si rapprende prima e bisognerà aggiungerla in più riprese perchè la farina la assorbirà, ma poi preferisco il risultato finale, ovvero la consistenza della ceciata...

Quando le zucchine sono quasi cotte, aggiungere la pastella. Far cucinare su un lato, poi girare aiutandosi con un coperchio come se fosse una pancake and cook the other side.

Serve with lettuce, tomato slices and maybe a cicinin of mayonnaise, mustard or whatever sauce ...
